ice creamA food produced by freezing while being stirred, ice cream is a mix consisting of one or more milk products, sugar, corn syrup, and flavoring. It may also contain egg products, stabilizers, emulsifiers, and other ingredients derived from non-milk substances. Air incorporated during the freezing process and water are other important constituents. Products related to ice cream include frozen custard, ice milk, sherbet, water ices, and mellorine-type products. Frozen custard is similar in composition to ice cream except that it must contain egg yolk solids. It is marketed both in soft and hard forms. Ice milk contains less fat and milk solids than does ice cream. Sherbets contain fruit juices, fruits, sugars, milk products, and stabilizers. Water ices are similar to sherbets except that they contain no dairy products.
